Abstract

AbstractHot water extraction is a simple method for home production of avocado oil. Avocado fruits were collected from 56 separate trees at random, at altitudes of 1000‐2000 m asl and grouped according to their brown or green and hard or soft skin. The oil was extracted by cooking in water, manual pressing and refining by heating. The yields of oil were 1.8 to 11.6% of the weight of the fruits, with an extraction rate of 82 to 85%. The oils had acceptable peroxide and acid values. Green fruits tended to produce greenish oil and brown fruits a brownish oil. The process could be scaled up to 40 kg batches with similar yields.
