Abstract

A program is presented to assist management in controlling water and waste in a dairy processing plant. Four phases of an educational program are presented emphasizing the need for and use of an in-plant water and waste supervisor. The educational program designed for a minimum of 10h stresses the need for minimizing water use and waste discharge to achieve economic and environmental goals. The correlation between water use, waste load, and product losses is explained.
