Abstract

Catechin plays a significant role in determining the level of astringency and taste of green tea. It has also certain health benefits which makes green tea very popular among mankind. This study reports the use of stainless steel electrode for the detection of catechin. The sensory evaluation of the electrode was compared with that of carbon paste and platinum electrode by means of cyclic voltammetry. The electrode also showed good linearity over the concentration range 1 to 10μM having R2 value of 0.99. Real tea samples are also explored herein to ascertain the performance of the electrode.
