Abstract

Foodservice managers from Colorado, Wyoming, and Montana were surveyed regarding their satisfaction with current food safety training programs and the value they placed on food safety training, in general. Further, these managers were asked if they would provide higher pay for those trained in food safety. Finally, managers were asked to assess the value of food safety training programs by indicating how important certain public issues were to their business. Approximately 75% of respondents had some type of food safety training in place and 67% were satisfied with the training received. Approximately 72% of managers said they would be more likely to hire food safety trained workers, and, of those, 50% would be willing to pay a higher wage to those trained. Customer satisfaction and image were the most important issues to the surveyed businesses.
