Abstract

AbstractUV/VIS diffuse reflectance spectroscopy and fluorescence spectroscopy have been used to investigate the cytochrome and pyridine nucleotide spectra during aerobic biomass growth of Saccharomyces cerevisiae followed by an anaerobic ethanol formation process. The cytochrome and NAD(P)H spectra are closely related to fermentation parameters such as biomass growth rate and ethanol concentration.
