Abstract
Sucrose synthetase (UDP-glucose: D-fructose 2-glucosyltransferase, EC 2.4.1.13) activity could be detected within all organs of egg plants ( Solanum melongena L.). The lowest activity was found in leaves (less than 5% of the total activity) and the highest was measured in growing fruit (90% of the total activity). Expressed on a dry weight basis the highest sucrose synthetase activity was found in flowers. In fruit total activity of this enzyme reached a maximum during fruit growth and decreased during maturity. The K m values for sucrose, fructose, UDP and UDP-glucose were found to be 160 mM, 12 mM, 0.61 mM and 0.077 mM, respectively. The pH optima for synthesis and cleavage of sucrose were found to be pH 9.0 and 6.2, respectively.
