Abstract

Two-dimensional (2D) correlation between two spectra is called the technology of two-trace two-dimensional (2T2D) correlation spectroscopy by Noda. 2T2D correlation spectroscopy can provide abundant and useful characteristic information of two similar samples, and effectively distinguish the weak difference of two similar spectra. Therefore, it has a good application prospect in identifying similar samples, such as identifying unadulterated and adulterated food. Meanwhile, the quantification of 2D correlation spectra can be achieved by the technology of 2T2D correlation spectroscopy. This article reviews the application of quantitative 2T2D correlation spectroscopy in the detection and analysis of food safety, including 2T2D near-infrared (NIR) correlation spectra, 2T2D mid-infrared (MIR) correlation spectra, 2T2D NIR-MIR correlation spectra, synchronous-asynchronous 2T2D (NIR, MIR, NIR-MIR) correlation spectra. And some promising development and application of 2T2D correlation analysis are prospected.
