Abstract

Comparative study of the caseino-glycopeptides obtained after rennin digestion of the caseins of the milk of cow, sheep and goat I. Study of the peptidic part The peptidic parts of the caseino-glycopeptides obtained after rennin digestion of the caseins of cow (entire, α and κ), sheep and goat have been studied. The percentage of the peptidic part is different for each glycopeptide. The amino acid compositions, similar but not identical, have been determined (absence of arginine and of aromatic and sulphur containing amino acids). The presence of phosphoserine has been shown. No N-terminal amino acid has been detected. The C-terminal amino acids are elanine and valine for the caseino-glycopeptides of cow and glutamic acid and valine for those of sheep and goat.
