Abstract

Root and tuber crops are subjected to various types of injuries at the time of harvesting. Cassava roots when exposed to unfavorable temperatures and humidity start showing blue to black vascular streaking, rotting, and tissue breakdown, which affects the crop’s economic value significantly. Tuber crops are underground storage organs that accumulate starch and have different botanical origins. Cassava is a globally important food and energy source. The storage capacity of cassava roots notably depends on varietal characters, maturity stage, postharvest injury and handling, harvest practices, and storage conditions. Sweet potato is a storage root that can be used for vegetative propagation. Its roots are mostly constituted of carbohydrates producing higher energy per hectare per d than other cereal crops. In countries where sweet potato is grown seasonally, the extension of shelf life becomes critical to avoid market glut.
