Abstract

ABSTRACTA study was conducted on the ability of two insulated containers to maintain the low temperature of ice cream in an ambient environment. A mathematical model was solved using Continuous System Modeling Program (CSMP) and finite difference technique to predict the temperature distribution in the product with time. the model predicted the temperature profiles within ± 5% of the experimental data.
