Abstract

Welfare reform has had a great impact on the United States economy. The University of Connecticut has been involved in developing and implementing training programs for welfare recipients, funded by a grant from Connecticut's Department of Social Service. Culinary arts has been the focus of the training program by the Department of Nutritional Sciences. During the past 3 years, the program has greatly evolved. Training welfare recipients is both a rewarding and difficult task. Opportunities exist for educational institutions and businesses to train welfare recipients in the food service industry.
