Abstract

Purification method on crude porang flour, using with multistage ethanol washing technique, resulted purified porang flour which can be used for meatballs production. The objective of this paper was to deliver scientific knowledge on formulating meat ball ingredients as well as to demonstrate and to carry out a practical work on making a meat balls using mixture gels of composite flour contained porang flour and k-carrageenan flour. The extensions process was conducted at a community family welfare organization (CFWO), Klangon Village, Saradan Distric, Madiun Region and Pandan Asri Community Village Forest Organization at Klangon Village, Saradan Distric, Madiun Region. Finally, the extension activities resulted deep awareness for a targeted people in maximixing the use of porang bulbs for food preparations and the product can be sold as processed food. This activity will support Local Government Wisdom as stated: “one village one product”.

Desa Klangon memiliki jumlah Kepala Keluarga (KK) 1004 Laki-2 dan 157 perempuan, Jumlah KK 1161 KK. Masyarakat desa Klangon bercocok tanam padi dan jagung. Permasalahan masyarakat desa Klangon, mereka produsen umbi porang, namun tidak memiliki keahlian dalam mengolah umbi porang menjadi produk pangan yang dapat di jual. Lahan garapan petani porang yang tergabung dalam Lembaga Masyarakat Desa Hutan (LMDH) Hasil wawancara dengan ketua LMDH Pandan Asri berkisar 0,5 – 2 Ha, dengan produksi berkisar 3 – 6 ton/Ha (Wawancara pribadi, 2017). Harga jual umbi porang berkisar Rp.3000 – 6.500/Kg. Harga umbi basah bulan Mei 2018 tercatat Rp.6.500,-/Kg. Harga Chip dari wawancara dengan Kepala Desa Klangon sekaligus Ketua LMDH Pandan Asri menyatakan maksimal Rp.35.000/Kg pada bulan mei dan akan meningkat sampai mencapai Rp. 50.000 – Rp.60.000,-/Kg pada bulan Juli. Masyarakat desa memproduksi umbi dan chip porang yang dipakai sebagai salah satu mata pencaharian pokok mereka. Bahan perekat yang digunakan dalam pelatihan pembuatan bakso di desa Klangon adalah campuran gel tepung porang dan karagenan.
