Abstract

With reference to information gathered from archives resources and local historical research, this study deals with olive cultivation in Trabzon district, a farming activity known to have occupied a significant place in the economy of the region but one which has recently been disregarded by the local population. The short history of olive cultivation, the local districts in Trabzon where olive was once cultivated, cultivation techniques and olive oil production techniques are the main focal points of the study. The first part of the study dwells on the villages in which olive was once cultivated, on the quantity of olive and olive oil using the data from the cadastral record books dating back to 1486, 1554 and 1583. In the second part, the study deals with olive cultivation and old methods of olive oil production in the region
