Abstract

Dilute solutions of gelatin were investigated by low shear viscometry in a concentration range well below that at which gel formation occurs. An anomalous pregelling effect in observed, indicating the existence of a transient weak network characterized by a linear increase of stress versus strain for strain units as large as 50. Above these strains a sudden breakdown of this weak network occurs, and the more usual shear thinning behaviour is finally observed.
