Abstract

Thiamine and riboflavin contents were determined in Finnish pig, heifer, and cow livers and in pork loin. The average thiamine contents were 0.33 ± 0.02 mg/100 g fresh weight (FW) in pig liver, 0.22 ± 0.02 mg/100 g FW in heifer liver, and 0.24 ± 0.02 mg/100 g FW in cow liver. Pork loin contained 1.10 ± 0.15 mg/100 g FW thiamine on average. Average riboflavin contents were 2.69 ± 0.13 mg/100 g FW in pig liver, 2.56 ± 0.16 mg/100 g FW in heifer liver, and 2.67 ± 0.18 mg/100g FW in cow liver. Pork loin contained 0.14 ± 0.01 mg/100 g FW riboflavin on average.
