Abstract

Rubus plants have been valued in China for a long time as a source of wild berries and medicinal plants. According to the investigations and studies on horticultural value, 23 species and 4 botanical varieties are considered as excellent germplasm for selection and breeding of raspberry and blackberry. Some species with high fruit quality and high yield can be used directly for fresh market or processing. At least 45 species and 4 cultivars are used as medicinal plants for more than 40 diseases. Investigation on the physical and chemical properties, stability and components of the pigments extracted from the fruits of some species reveals that the pigments in Rubus fruit can be extracted more readily with alcohol than with water. Their anthocyanidins including cyanidin, pelargonidin, delphinidin as well as their glycosides are the principal pigments in the fruits. Some flavonoids exist in bramble fruits also. R. tephrodes Hance and R. lambertianus Ser. are considered good natural resources of edible pigments because of their good color and stability.
