Abstract

Yoghurt has been made successfully on a laboratory scale using single‐starter organisms. The resulting yoghurts have acidity and acetaldehyde content comparable to those made with mixed starter organisms. These products may therefore be of interest commercially. The advantages and disadvantages are discussed.
