Abstract

Studies carried out by different workers have shown that milk substitutes and dried infant foods based on certain oilseeds and nuts possess high nutritive value and can be used for feeding infants. Among the different oilseeds and nuts, soyabean and groundnut are the most promising. Soyabean milk has been found to promote good growth in infants. Infant foods based on a blend of groundnut protein isolate or groundnut flour, skim milk powder, vegetable fats, malto-dextrin and fortified with essential vitamins and minerals have been reported to be as good as infant milk foods in promoting growth of infants. In view of the shortage in the production of milk in India and other developing countries, there is urgent need for the large scale production of milk substitutes, vegetable toned milk and dired infant foods based on oilseeds and nuts for feeding infants.
