Summary 1 The dominant mould of blue cheese is Penicillium roqueforti Thom. 2 P. roqueforti group may be subdivided on colony characters into three classes. 3 Pitting of conidiophores and metulae is not a stable morphological character in P. roqueforti Thom. 4 A new variety has been isolated from Blue Cheshire cheese. The name suggested for this strain is P. roqueforti Thom var. viride . 5 The dominant mould of Dolce Verde cheese is related to P. expansum .
