Abstract

Summary Our current knowledge of the structures of wheat and barley prolamins and their genes is summarised using as examples the high molecular weight subunits of wheat glutenin and B1 and C hordeins of barley. Recent experiments on the regulation of expression of the B1 hordein genes are also described. These studies are providing a sound basis for attempts to manipulate grain protein quality by genetic engineering.
