Abstract

The relationship between freezing resistance and cellular long-chain fatty acid composition of 18 selected yeast strains was studied. All strains produced a series of saturated and unsaturated evennumbered fatty acids ranging from 14 to 20 carbons in length. The majority of the freeze-resistant yeasts were found among fermentative species with a content of oleic acid above 40%.
