Abstract

Pulsed electric field (PEF) is a promising non-thermal sterilization technology for liquid foods, and treatment chamber discharge is a bottleneck problem limiting its industrial application. Unlike the static treatment chamber, the pulsed discharge within bubble in the dynamic treatment chamber is influenced by the flow field, and the bubble evolution before discharge may be very different. In this paper, we focus on the differences and similarities between the dynamic and static treatment chambers of pulsed discharge within bubble under repetitive rectangular pulses by using plate electrodes, and study the morphology and subsequent development of the discharge arc within bubbles during pulsed discharge in the dynamic treatment chamber. Findings in this study may provide a reference for the pulse parameters and the selection of the flow rate in the PEF dynamic treatment chamber.
