Abstract

Samples of nine plant foods prepared and cooked according to local methods were analysed by approved methods. The analyses included amino acid composition, mineral, and vitamin determinations. The quality of the protein was also evaluated by indices based on the amino acid composition. The data show that isaquente (Treculia africana) fruit had the greatest potential value as a source of protein and energy and may even be suitable for use as a weaning food. An increase in cereal production may be the answet to the protein energy deficiencies of the diet on San Tomé.
