Abstract
Premium quality homemade wines made from Ontario grapes, imported grapes and grape concentrates were analyzed for mutagen content. The mutagen analysis was the Ames Salmonella/microsomd/fecalase bioassay. White wines from all sources contained very low levels of mutagen. Red wines had higher mutagen levels than white wines. The mutagen content of wines from Ontario grapes, imported grapes and grape concentrates were similar. The effects of vinification and aging processes appear to be more significant than the source of the grape must.
