Abstract

Washing of eggs in sterile plastic bags is an efficient method for determining the bacterial contamination on egg shells. Eggs classified as clean, soiled or dirty by gross examination showed marked differences in average bacterial counts.Egg shell bacterial counts showed little or no change after storage at 4°C. for 1 day but only 10 percent of the bacteria were still viable after 7 days. Incubation at 38°C. resulted in a gradual decline in viable bacteria to a low of 2 percent after 21 days.Holding eggs on ice in a polystyrene chest for 24 hrs. resulted in only a slight reduction in the number of viable bacteria and would be a practical method to transport eggs for monitoring of field flocks.
