Abstract

Abstract Although kale (Brassica oleracea var. acephala, Linn.) is considered a minor crop in Georgia, several processors have indicated considerable interest in the yield of this crop in recent years. Kale, like the other green leafy vegetables, has a high content of Vitamin A and contains appreciable amounts of thiamine and ascorbic acid (2).
