Abstract

Ethanol-induced leakage of UV-absorbing compounds from free and immobilized Saccharomyces cerevisiae cells was studied. The resistance of immobilized cells to this ethanol effect is accompanied with increased levels of phospholipids and sterols. These results suggest a positive role of whole cell immobilization in improving yeast ethanol tolerance.
