Abstract

Since cod liver oil has come into rather general use in poultry feeding, there has been considerable speculation concerning the effect of cod liver oil upon the flavor of poultry meat. Any unpleasant flavor in poultry meat would naturally have considerable effect upon market demand, and, therefore, market price.So far as we are aware, no definite tests along this line have been reported, although it has occasionally been stated that chickens slaughtered immediately following cod liver oil feeding would have a “fishy” taste. We therefore undertook these studies in order to get some definite idea of the degree to which different levels of cod liver oil in the diet would influence the flavor of poultry meat, as well as to determine the persistency of such flavor after the discontinuance of cod liver oil from the diet.EXPERIMENTALThirty White Leghorn chickens were used in this work.
