Abstract

1. 1. The occurrence of desaturase activity was examined in the subcellular fractions of goat ( Capra hircus), sow ( Sus domesticus) and rabbit ( Oryctolagus cuniculus domesticus) mammary glands. Rabbit mammary tissue was inactive, but microsomal particles from both goat and sow mammary tissue were effective in converting stearic acid into oleic acid over a wide range of concentrations. 2. 2. The microsomal bound desaturase enzyme was stimulated by glycerol-3-phosphate and by the particle-free supernatant; both factors enhanced triglyceride synthesis in the assay system. 3. 3. Oleic, linoleic and linolenic acids inhibited desaturase activity. The goat desaturase system showed maximum activity with respect to stearic acid.
