Abstract

AbstractA systematic account is given of the conversion of collagen to gelatin. It is shown that collagen can be converted into two types of gelatin of differing nitrogen content. A study of heat degradation has made it possible to separate the effects of heat and chemical treatment in the preparation of one type. The results have been collated by means of diagrams of molecular structure which lead to useful deductions and suggestions for further investigation.
