Abstract

A change of government policy on Guam eliminating annual food handler medical examinations and requiring, instead, training in hygiene has reduced the incidence of foodborne disease cases associated with eating in commercial food and drink establishments. Some specific disease problems generally attributed to foodborne transmission, including Salmonella and Vibrio infections, have not been similarly reduced.
