Abstract

The sesquiterpenoid contents of intact and of injured fruit bodies of the pungent species Lactarius necator and L. circellatus (mushrooms) have been investigated. The fruit bodies originally contain fatty acid esters of the sesquiterpene velutinal as the only sesquiterpenoids. When the fruit bodies are injured, by grinding, the esters are enzymatically converted into sesquiterpene furans, mono- and di-aldehydes, and lactones
