Abstract

The article discusses trans fatty acids and argues that the U.S. Food and Drug Administration's November 2013 ruling that partially hydrogenated oils are unsafe was an overdue realization. Topics include the invention of partial hydrogenation, the research into the health risks of trans fats by the author and colleagues and others, including on heart disease and cholesterol levels, and city bans of trans fat use in restaurants.
