Abstract

HACCP system is one of the world's most popular food safety quality control system. To avoid food poisoning and other food-borne diseases, we must analyse and judge factors causing foodcontamination in the food supply chain, determine the supply chain CCP (critical control points), thereby establish limits and monitoring system for each CCP, correct errors based on the monitoring results, finally, audit system and make operational records. According to China's actual situation and the domestic and international standards, take the production and processing of pork as an example, I analysed the processes and critical control points in the supply chain of pork breeding, slaughtering, transportation and sales.
