Abstract

The antioxidant activities of carboxymethylated polysaccharide from cushaw were investigated. The cushaw polysaccharide was extracted by hot water method and deproteinized with CaCl2. There was a peak around 178 in 13C NMR spectrum, which proved that the preparation of carboxymethyl cushaw polysaccharide was successful. At the same time, it indicated that the carboxymethylated cushaw polysaccharide had better ability to scavenge superoxide anions and hydroxyl radicals.
