Abstract
Ternary equilibrium data for the system of isopropanol-water-oil have been determined at 60°C, using spermaceti and lard as model wax esters and triglycerides, respectively. Wax esters as the oil are less soluble than triglycerides for a ternary system containing more than 55% of IPA. Phase diagrams have been prepared at 20°C and 60°C for the ternary system of IPA-H2O with barracudina oil (which contains about 80% wax esters). Based on these results, it was predicted that the “Halifax” IPA extraction process for the production of fish protein concentrate could be satisfactorily used for barracudina without further modification. Distribution of lipids in various IPA and oil phases during the IPA extraction has been studied for comparison with previous results.
