Abstract
This chapter speculates various milling operations of grains that are carried out in the milling industry. It highlights the various technological advancements that have been made along with the measures to evaluate efficiency. Milling of grains is defined as a process of breaking down of coarse grains into fine particles. Wheat is milled with a moisture percentage of 14%. Milling of wheat aims to reduce the size of grain by separating the endosperm from the bran layer and germ layer. India ranks second in rice production. During the rice milling process, the removal of the husk layer results in brown rice. Milling of rice using hand pound is a traditional method, which involves pounding of paddy in stone or pestle and mortar. Milling of millets is generally done to remove the germ and bran layer which are highly rich in phytochemicals and fiber. Pitting is a common milling operation performed using an emery-coated roller in commercial dal mills.
