Abstract

Quantity foods courses provide an excellent environment in which to teach management traits via team-building and group dynamics. A dicussion of variables that affect the team-building process, including, the selection of individuals, how roles are perceived by group members, and how evaluative powers within the group can change behavior, is provided. Implications for hospitality educators are detailed and conclusions are stated to support the integration of theory and experience in an academic environment.
