Abstract

Joseph M. Carlin, MS, MA, RD, LDN, FADA, is a professional member of the American Dietetic Association (ADA) and the Institute of Food Technologists, Chicago, Illinois. He is presently a member of the board of editors of Nutrition Today. He served as an associate editor and contributing editor of the Oxford Encyclopedia of Food and Drink in America (2004). He is a past recipient of the ADA foundation Award for Excellence in Community Dietetics and a charter fellow of the ADA (FADA). He is a past president of the Culinary Historians of Boston and frequently appears on the History Channel as an expert on food and drink in America.
