Abstract

Abstract Samples of walleyed pike (Stizostedium vitreum vitreum) were obtained above and below sources of effluent discharges into the North Branch of the Flambeau River (Price County) Wisconsin. Flavor comparisons and acceptability of the fish meat was made on the basis of sampling location and size of fish. The acceptability scores showed that the walleyes collected from above the effluent discharge points were better than those from locations below the discharge points. This also was true regardless of fish size. The most common flavor criticisms given by the judges were chemical, petroleum-like, metallic, and earthy flavors. Identification of causative agents would allow establishment of water quality improvement programs to specifically remove offending off-flavor compounds.
