Abstract

Summary Optimal protease activity in extracts of callus cultures of papaya is obtained by triturating lyophilized callus powder with phosphate buffer at pH 6.0 in a glass mortar; addition of reducing agents to the extraction medium does not increase or stabilize enzyme activity. Casein, casein yellow, azocasein and azoalbumin are good substrates for the proteases; little or no acitivity could be measured with hemoglobin, azocoll, hide powder azure and benzoyl-DL-arginine-p-nitroanilide (BAPA) as substrate.
