Abstract

Values of turbidity F (G/G'), dissymmetry and depolarisation factors of solutions, giving rise to gels of sodium oleate and sodium erucate, prepared at 140 C0, during their cooling to 20 °C, have revealed that the particles in these systems are comparatively large and only slightly anisotropic prior to formation of gels; these characteristics remain more or less constant during gel-formation, but soon after the setting of gels the size of the particles decreases and their anisotropy increases markedly and rapidly on account of their under-going characteristic syneresis. Particles in these systems containing larger amount of the soaps are bigger and remain bigger throughout the period of study, but show no regular behaviour in respect of anisotropy.
