Abstract
The paper presents the results of the study of the structural dynamics of food consumption by the population of Russia for the period from 2013 to 2017 per capita. The study is important to identify current trends in consumer behaviour in the context of food embargo and economic recession. The research methodology is presented by statistical analysis of coefficients and indexes of structural changes with a constant and variable base of comparison. The authors determined that starting in 2014, there are significant changes in the structure of consumed food products, which affect the structure of the retail turnover of food products with a time lag of two years. It has also been established that a 20% difference in the level of real disposable income creates a structural shift in the consumption of basic foodstuffs by the population in the range of 3-5%.
