Abstract

Phytase is a kind of enzymes that stepwise hydrolyse phytic acid to release phosphate radicals and inositol derivatives. As a new type of feed additives,it has great application potential in the areas of animal nutrition and environmental protection. Here the classification,sources,production technique,and downstream processing of phytase,as well as the strategies employed for improving phytase production and the trends for further research and development in the future are summarized.
