Abstract

Summary. A method for the assay of starches in food and in stool is described. This method is based on the hydrolysis of starches into glucose by means of the Rhizopus Delemar glucoamylase (Sumizyme). It is more specific and is also easier to perform than other methods for starch assay. It is suitable for measuring the absorption coefficient of starch in man. Absorption of dietary starch in normal infants (4-7 months old) and children (1-2 years old) is very efficient: the absorption coefficient is higher than 99%. In some patients with pancreas fibrosis and in some others with coeliac disease, starch malabsorption is present: there is no correlation between fat and starch excretion in stool.
