Abstract

Abstract The function of curcumin in the reduction of Fe3+ to Fe2+ and in oxygen radical reactions is discussed. The presence of the diketone moiety in the curcumin molecule seems to be essential both in redox reactions and in the scavenging of oxgyen radicals.
