Abstract

AbstractLight scattering measurements have been made on several fractions of potato amylose in dimethyl sulfoxide in the molecular weight range 2.2 · 105 to 3.05 · 106. Viscosity measurements have also been carried out in a multibulb shear viscometer using N‐potassium hydroxide, dimethylsulfoxide and ethylene diamine as solvents, and non‐NEWTON‐ian behaviour was observed in samples with [η] ≥ 3.0.The constants in the STAUDINGER‐KUHN equation have been determined and results indicate that amylose has a randomly coiled conformation in ethylene diamine, but is much more extended in the other two solvents. The hydrodynamic behaviour is discussed in terms of various theories and evidence for a basic helical form in solution is considered.
