Abstract

INTRODUCTIONTHE extent to which the interior quality of any lot of eggs will decline under various storage conditions is still an important factor in the current marketing situation for shell eggs. The time lapse from producer to retail outlet for at least a portion of the market is apparently decreasing as contractual agreements develop directly between large scale producers and retail outlets. In spite of this trend there are still the variable holding conditions related to turnover time in the retail store and time of ultimate use by the consumer as well as during intermediate handling for eggs marketed more indirectly.Differences in rate of decline as related to strain effect have received the chief interest in current years with variable conclusions being reached. May et al. (1957), Kyle and Mitchell (1958), King et al. (1961), and Fry et al. (1965) concluded that strain did influence quality decline. .
