Abstract

A structured, nonsegragated model of Saccharomyces cerevisiae has been constructed. The model predicts batch growth of the yeast on a variety of nitrogen sources and at variable dissolved oxygen concentrations, and the slowing of growth through the combined effects of nutrient exhaustion and product inhibition in the later stages of the fermentation. The model has been designed to be readily amenable to the addition of aspects of yeast physiology not currently included.
