Abstract

The parameters K m and k cat were determined for 16 methyl hippurates (CH 3OCOCH 2NHCOC 6H 4-X) hydrolyzed by papain. A simple linear relationship is found between log 1 K m and the hydrophobic substituent constant π. It is found that log k cat is parabolically related to π. The results with papain are compared with results obtained by Hawkins and Williams with the enzyme bromelain. The two enzymes behave in a similar fashion.
